If you're like me, you're probably looking for quick but tasty lunch ideas. I made these tuna salad stuffed avocados for lunch the other day and they really hit the spot. They were simple to make and didn't take up a lot of time. That's important to me during the school year when I often have limited time for lunch or end up working through my lunch hour just so I don't have extra work to do after hours. Teachers, I know you understand this.
Ingredients:
1 can of tuna
1 avocado
¼ cup diced red onion
2 tbsp chopped parsley
1 tbsp Primal Kitchen garlic aioli mayo (regular works too)
Salt and pepper to taste
Directions:
Prep your tuna salad in a small bowl by combining the tuna, onion, parsley, mayo, salt and pepper. Mix well.
Slice and pit your avocado and scoop out some of the insides if needed.
Stuff the tuna salad in the avocado and enjoy!
See, it's really that simple. I served mine with sliced rainbow carrots for a pop of color and some extra crunch. This tuna salad also goes well between two slices of toasted gluten free sandwich bread.
