My time living on Kauai was short, but it still gave me enough time to fall in love with this simple meal called loco moco. Loco moco is Hawaiian comfort food that'll fill you up and won't cost you much. Traditionally it's made on a bed of white rice, topped with a burger patty, smothered in gravy, and served with a sunny side egg on top. This is my own low carb version that uses cauliflower rice as the base instead. I replaced the gravy with teriyaki sauce because I like the flavor of it. Make this the next time you're craving some hearty comfort food, whether it's for breakfast or not.
INGREDIENTS:
1 cup cooked cauliflower rice
⅓ lb. grass-fed ground beef
1 egg
½ cup teriyaki sauce
2 green onions, chopped
DIRECTIONS:
Cook your hamburger patty how you prefer it (I pan-fried mine, but you can grill it as well).
Cook your egg sunny side up to your liking. I fried mine in ghee in my new non-stick pan.
Put the cauliflower rice on the bottom of your bowl. Top with the patty. Pour the teriyaki sauce over the patty. Place the egg on top. Sprinkle with chopped green onions.
This comfort meal came together rather quickly and kept me full for hours. If you're craving more carbs, you can always go the traditional route and serve it over a bed of white rice.
