This chunky red plum salsa recipe came about as an accident. I went to the store intending to buy peaches. August is national peach month and I wanted to celebrate. Unfortunately, the peaches weren't looking so great. But the red plums looked amazing and they were on sale. I love a good sale. So I bought a few and racked my brain to come up with a creative way to use them. So now here you have it; chunky red plum salsa. This salsa is slightly sweet, slightly tangy and slightly spicy. It pairs well with plantain chips, grain-free tortilla chips (especially the lime flavored ones from Siete Foods), poultry and fish. Enjoy!
Ingredients:
2 red plums, chopped
½ small red onion, finely diced
1 jalapeño, seeded and finely diced
¼ cup chopped cilantro
Juice of one lime
Salt and pepper to taste
Instructions:
Place all the ingredients into a bowl. Mix well and serve.
To really bring out the flavors, let it sit in the fridge for at least an hour.
